Baked BBQ Chicken Casserole
These baked BBQ chicken tenders are the easiest to prep, cook and eat. You can prep the chicken with the seasoning the day before to marinate in the fridge, or bake it for dinner instantly. This is a fast prep and easy clean up dinner at my house.
This is a recipe on repeat that I can almost use without peeking at the instructions. When you are short on time, this recipe hits a homerun! I have served it with streamed vegetables, french fries or rolled up in a tortilla before. Our favorite is served with steamed broccoli, mozzarella cheese sticks and a tortilla. Don't forget your drink!!

Chicken Salad Sandwich
- 2 1/2 cups diced cooked chicken (Wal-Mart's rotisserie chicken works great)
- 1/2 cup chopped celery
- 1 Tablespoon finely chopped red or white onion
- Mayo
- 1 teaspoon lemon juice
- 2 dashed Worcestershire sauce
- Dash mustard
- Celery salt (to taste)
- Pepper (to taste)
- Rolls
Party Tacos
- 1 pound ground turkey
- 2/3 cup chopped large onion
- 1 packet taco seasoning mix
- 1/2 cup of salsa
- 1/3 cup water
- 1 box taco shells
- 1 can of corn
- 2 cups lettuce
- 2/3 cup of onions and green or red peppers
- 1/8 cup of green onions
- 2/3 cup of Italian tomatoes
- 1/3 cup avocados, pitted, peeled, and chopped (I use more)
- 1/3 cup mayo - don't omit
- 1/8 cup salsa
- 2/3 cup finely Mexican shredded cheese
- 2/3 cup cilantro
- Cook ground turkey, and 2/3 cup of chopped onion. Stir in 1 packet taco seasoning mix, 1/2 cup salsa, and 1/3 cup water.
- Heat oven to 425 degrees. Spray cookie sheet with cooking spray. Dry canned corn on paper towels, and then spread corn on sprayed cookie sheet. Cook 15 min, stir, and cook until slightly brown. About 5-10 more min.
- In large 3 quart glass dish, add lettuce, bell peppers, roasted corn, onions, tomatoes, and avocados. Mix.
- In small bowl, combine mayo and 1/8 cup salsa. Stir and add to large bowl and mix well.

Feta-Topped Chicken
Ingredients:
- 4 boneless skinless chicken breast halves (1 1/4 lb)
- 2 tablespoons balsamic vinaigrette dressing (don't omit, it's very good)
- 1 teaspoon Italian seasoning
- 1/4 teaspoon seasoned pepper
- 1 large roma (plum) tomato, cut into 8 slices
- 1/4 cup crumbled feta cheese (1 oz)
Directions:
1. Set oven control to broil. Brush both sides of chicken breasts with dressing. Sprinkle both sides with Italian seasoning and seasoned pepper. Place on rack in broiler pan. If you don't have a broiling pan, you can make your own. Use a cooling rack and a casserole dish.
2. Broil with tops 4 inches from heat about 10 minutes, turning once, until juice of chicken is clear. (I usually turn mine more than once.) Thickest part of chicken will read 170. Top with tomato and cheese. Broil 2-3 min longer or until cheese is lightly browned.

Chicken Florentine Casserole
- 4 skinless, boneless chicken breast halves
- 1/4 cup butter
- 3 tsp. minced garlic
- 1 tbls lemon juice
- 1 (10.75oz) can cream mushroom soup
- 1 tbls Italian seasoning
- 1/2 cup half-and-half
- 1/2 cup grated parmesan cheese
- 2 (13.5oz) can spinach, drained
- 4 oz. fresh mushrooms ( I leave out)
- 2/3 cup bacon bits
- 2 cups mozzarella cheese
1. Preheat oven to 350 degrees. Place chicken breast on baking sheet (I cut into strips and coat in olive oil); and bake 20-30 minutes until no longer pink in the middle and juices run clear, and set aside.
2. Increase oven temp to 400.
3. Melt butter in medium saucepan over medium heat. Stirring constantly, mix garlic, lemon, cream of mushroom, Italian seasoning, half-and-half, and parmsean cheese.
4. Arrange spinach over bottom 9x9 baking dish. Cover spinach with the mushrooms. Pour half the mixture from saucepan over mushroom. Arrange chicken breast in the dish, and cover with the remaining sauce mixture. Sprinkle with bacon bits, and top with mozzarella cheese.
5. Bake 20-25 minutes until bubbly and lightly browned.

Tie-Dye Cupcakes
- 1 (18 ounce) box white cake mix
- red food coloring
- blue food coloring
- green food coloring
- yellow food coloring
- 1 (16 ounce) can of vanilla icing/frosting
Preheat oven to according to box directions. Prepare the cake mix according to box directions. Divide the batter evenly in 6 small bowls. (I only used 3 bowls of batter). You will dye each bowl individually. To make the colors, use the following amounts of food coloring. Make sure to scrape the sides of the bowls to get all food coloring mixed together. Coloring mixtures:
Purple: 9 red + 6 blue
Blue: 12 blue
Green: 12 green
Yellow: 12 yellow
Orange: 12 yellow +4 red
Red: 18 red
After you have mixed the batter colors, line 24 muffin cups. Evenly distribute the batter between the cups in the order that you dyed them, layering them carefully. You can use about a half of a spoonful of each color per cup. Frost with white icing and add rainbow sprinkles. ( I colored the icing also).
Italian Meatballs
- 1 1/2 lbs. of lean beef or pork (I use 1 lb. of beef and 1/2 pork)
- 1/4 cup parmesan cheese
- 1 large egg- slightly beaten
- 1/2 italian bread crumbs
- 2 tbls minced garlic
- 2 tsp salt- or less
- 1 tsp black pepper
- 1/2 cup milk
- 1 tsp dried oregano
- 2 tsp dried parsley

Apple-Sesame Chicken
- 1 Tablespoon reduced-calorie margarine
- 2 (6-ounce) skinless,boneless chicken breast halves, cubed or thin strips ( I used Lemon-Pepper to season chicken while cooking)
- 3 cups fresh broccoli florets ( I use frozen broccoli florets)
- 1 cup cubed Red Delicious apple ( about 1 medium)
- 3/4 cup sliced mushrooms ( I leave out)
- 1/4 cup thinly sliced celery ( I use more)
- 1 Tablespoon water
- 1/4 teaspoon salt
- 1/4 teaspoon curry powder
- 1 1/2 cups cooked long-grain rice ( I use Uncle Ben's rice in a bag)
- 1/2 teaspoon sesame seeds ( I leave out)

Italian Meatloaf
- 1 lb ground beef (leaner is better)
- 1 4 oz can mushrooms (reserve juice)
- 1/2 cups dry bread crumbs
- 1 large egg
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 4 center cut bacon strips( I use Oscar Mayer Real Bacon bits)
- 1 teaspoon dried parsley
- 1 teaspoon oregano
- 1/2 teaspoon basil
- pinch or less of thyme
- 2 tablespoons dry bread crumbs
- 1/2 onion finely chopped
- 1 cup mozzarella cheese
- 1 8oz can tomato sauce ( I used last years canned tomatoes from the garden)
Roll meat into an 8 inch wide loaf. Place meatloaf into an 8 inch glass bread pan or glass baking dish.
Bake around 50-60 minutes. Pour tomato sauce over meatloaf and cook an additional 15 minutes.
Let meatloaf sit for 5 minutes before slicing and serving.

Classic Chicken Parmesan with noodles
Ingredients: 4 fresh boneless, skinless chicken breasts, Italian dressing, seasoned bread crumbs, Pasta sauce, (I used marinara sauce), 1 cup mozzarella cheese (shredded), and grated parmesan to taste.
Directions: Pour dressing into a dish and dip chicken in it. Roll chicken in bread crumbs. Cook chicken until done, using a meat thermometer. Spoon sauce oven each piece of chicken, sprinkle mozzarella cheese on sauce and cook again until cheese is melted. Sprinkle parmesan and serve. (I used nuwaveoven.com for recipe) Serves 4
