Tie-Dye Cupcakes

Tie-Dye Cupcakes
Ingredients:
  • 1 (18 ounce) box white cake mix
  • red food coloring
  • blue food coloring
  • green food coloring
  • yellow food coloring
  • 1 (16 ounce) can of vanilla icing/frosting
Directions:
 Preheat oven to according to box directions. Prepare the cake mix according to box directions. Divide the batter evenly in 6 small bowls. (I only used 3 bowls of batter). You will dye each bowl individually. To make the colors, use the following amounts of food coloring. Make sure to scrape the sides of the bowls to get all food coloring mixed together. Coloring mixtures:

Purple: 9 red + 6 blue 
Blue: 12 blue
Green: 12 green
Yellow: 12 yellow
Orange: 12 yellow +4 red
Red: 18 red 

After you have mixed the batter colors, line 24 muffin cups. Evenly distribute the batter between the cups in the order that you dyed them, layering them carefully. You can use about a half of a spoonful of each color per cup. Frost with white icing and add rainbow sprinkles. ( I colored the icing also).







This was a very fun project to do with a 12 year old.

Italian Meatballs

Italian Meatballs

  • 1 1/2 lbs. of lean beef or pork (I use 1 lb. of beef and 1/2 pork)
  • 1/4 cup parmesan cheese
  • 1 large egg- slightly beaten
  • 1/2 italian bread crumbs
  • 2 tbls minced garlic
  • 2 tsp salt- or less
  • 1 tsp black pepper
  • 1/2 cup milk
  • 1 tsp dried oregano
  • 2 tsp dried parsley

Preheat oven to 375. Mix all ingredients together and make them 
into meatballs. Bake 35-40minutes, or until done. I served with 
noodles,bread and a veggie. My family REALLY likes this recipe.

This is my version of Pico de Gallo with only 3 ingredients.

Tomato
Onion
Cilantro

And that's all I use. It's good on chips, pork or anything else. I love to use everything out of the garden. Great summer snack.

Apple-Sesame Chicken

  • 1 Tablespoon reduced-calorie margarine
  • 2 (6-ounce) skinless,boneless chicken breast halves, cubed or thin strips ( I used Lemon-Pepper to season chicken while cooking)
  • 3 cups fresh broccoli florets ( I use frozen broccoli florets)
  • 1 cup cubed Red Delicious apple ( about 1 medium)
  • 3/4 cup sliced mushrooms ( I leave out)
  • 1/4 cup thinly sliced celery ( I use more)
  • 1 Tablespoon water
  • 1/4 teaspoon salt
  • 1/4 teaspoon curry powder
  • 1 1/2 cups cooked long-grain rice ( I use Uncle Ben's rice in a bag)
  • 1/2 teaspoon sesame seeds ( I leave out)
   Directions: Melt margarine in large non-stick skillet over medium-high heat. Add chicken; stir-fry 3 minutes. (I cook a little longer). Add broccoli and next 6 ingredients; cover,reduce heat, and simmer 5 minutes or until vegetables are crisp-tender, stirring often. Spoon 3/4 cup cooked rice onto each plate and top with evenly with chicken mixture. Sprinkle with sesame seeds.

Italian Meatloaf

  • 1 lb ground beef (leaner is better)
  • 1  4 oz can mushrooms (reserve juice)
  • 1/2 cups dry bread crumbs
  • 1 large egg
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 4 center cut bacon strips( I use Oscar Mayer Real Bacon bits)
  • 1 teaspoon dried parsley
  • 1 teaspoon oregano
  • 1/2 teaspoon basil
  • pinch or less of thyme
  • 2 tablespoons dry bread crumbs
  • 1/2 onion finely chopped
  • 1 cup mozzarella cheese
  • 1  8oz can tomato sauce ( I used last years canned tomatoes from the garden)
  Directions: Preheat oven to 375 degrees. Add water to mushroom juice to make 1 cup. ( I leave out the mushrooms). Fry bacon until crispy, drain and crumble. Set aside. ( Save time by using already cooked bacon). 
  Combine beef, 1/2 cup bread crumbs, egg, mushroom juice, garlic powder and salt in a large bowl. Mix well. On wax paper, form meat mixture into a 8x12 inch rectangle.



   Sprinkle meat with parsley, oregano, basil, thyme, and 2 tablespoons of breadcrumbs. ( If you mix the seasons in a small dish first, then oven meatloaf works well). Spread bacon, onion, mushrooms, and cheese evenly over meat.

   Roll meat into an 8 inch wide loaf. Place meatloaf into an 8 inch glass bread pan or glass baking dish.

  Bake around 50-60 minutes. Pour tomato sauce over meatloaf and cook an additional 15 minutes.
  Let meatloaf sit for 5 minutes before slicing and serving.

Classic Chicken Parmesan with noodles


Ingredients: 4 fresh boneless, skinless chicken breasts, Italian dressing, seasoned bread crumbs, Pasta sauce, (I used marinara sauce), 1 cup mozzarella cheese (shredded), and grated parmesan to taste.

Directions: Pour dressing into a dish and dip chicken in it. Roll chicken in bread crumbs. Cook chicken until done, using a meat thermometer. Spoon sauce oven each piece of chicken, sprinkle mozzarella cheese on sauce and cook again until cheese is melted. Sprinkle parmesan and serve. (I used nuwaveoven.com for recipe) Serves 4
