Dog Treats

Peanut Butter Dog Biscuits
This one is for our doggies!!


Don't forget about our 4 legged family with this easy dog biscuit recipe. My dog loved these and so have the doggies that we gave them to. Here is an Amazon link that has plenty of cookie cutter choices to pick from. (AMAZON LINK) Making these dog biscuits will bring your dog into the kitchen as fast as they can! Your family will also love to help making these and will bring a big smile to their pets faces. 




Peanut Butter Dog Biscuits
  • water or beef broth (about 1/2 cup)
  • 1/2 cup oil
  • 2 eggs
  • 3 TBsp peanut butter
  • 2 tsp vanilla
  • 2 cups flour
  • 1/2 cup corn meal
  • 1/2 cup oats
Blend wet ingredients, except water or broth. Whisk dry ingredients together and mix into wet mixture. Add water or broth just so you can form and roll out. Cut out with your favorite or seasonal cookie cutters. Bake at 350 until edges are golden brown. 


I hope your dog loves them as much as mine. They might just show up all dressed up ready for more dog biscuits.

Homemade Chicken and Dumplings






Ingredients:

2 cups Flour
1/2 tsp Baking Powder
1 pinch salt
2 tbsp butter
1 cup milk, a bit less than a full cup
2 quarts chicken broth
3 cups cooked chicken (I cooked mine in chicken broth)
1 can chicken broth for uncooked chicken
1 can cooked carrots


Directions:
 Cook chicken in chicken broth with added water about an inch over chicken in pot. Remove cooked chicken and reserve broth.
  In a bowl, combine the flour, baking and salt. Cut the butter into the dry ingredients with a fork. Stir in the milk, mixing with a fork until the dough forms a ball. Heavily flour the work surface. Roll the dough out thin with a heavily floured rolling pin. You can use a spatula to remove dumplings from surface. Cut dumplings with a pizza cutter or fancy cutter. Cut them about 2x2, or smaller. You can cut them whatever your preference is.
  To cook the dumplings, bring the broth to a boil. Drop dumplings in one at a time and stir constantly. Cook them until not doughy in the middle. About 20-30 minutes. Add chicken and carrots until warm. 
  I loved this recipe. Very tasty. Can't wait until I get to make it again.

Chicken Salad Sandwich

CHICKEN SALAD SANDWICH

 Ingredients:
      • 2 1/2  cups diced cooked chicken (Wal-Mart's rotisserie chicken works great)
      • 1/2 cup chopped celery
      • 1 Tablespoon finely chopped red or white onion
      • Mayo
      • 1 teaspoon lemon juice
      • 2 dashed Worcestershire sauce
      • Dash mustard
      • Celery salt (to taste)
      • Pepper (to taste)
      • Rolls

Thanks Ms. Sharra for this wonderful recipe!   She uses a little more Worcestershire sauce and a little more onion. Also, she say's you can vary the ingredients for your tastes, and it seems to taste different each time she makes it. But it is always good. And it is very, very GOOD.

Party Tacos

PARTY TACOS


This recipe is SOOO good! Delicious every time I make it.

Ingredients:
  • 1 pound ground turkey
  • 2/3 cup chopped large onion
  • 1 packet taco seasoning mix
  • 1/2 cup of salsa
  • 1/3 cup water
  • 1 box taco shells
  • 1 can of corn
  • 2 cups lettuce 
  • 2/3 cup of onions and green or red peppers
  • 1/8 cup of green onions
  • 2/3 cup of Italian tomatoes
  • 1/3 cup avocados, pitted, peeled, and chopped (I use more)
  • 1/3 cup mayo - don't omit
  • 1/8 cup salsa
  • 2/3 cup finely Mexican shredded cheese
  • 2/3 cup cilantro
Directions:
  1. Cook ground turkey, and 2/3 cup of chopped onion. Stir in 1 packet taco seasoning mix, 1/2 cup salsa, and 1/3 cup water.
  2. Heat oven to 425 degrees. Spray cookie sheet with cooking spray. Dry canned corn on paper towels, and then spread corn on sprayed cookie sheet. Cook 15 min, stir, and cook until slightly brown. About 5-10 more min.
  3. In large 3 quart glass dish, add lettuce, bell peppers, roasted corn, onions, tomatoes, and avocados. Mix.
  4. In small bowl, combine mayo and 1/8 cup salsa. Stir and add to large bowl and mix well.
5.Fill your tacos with mixture, add cheese and cilantro. Then enjoy!!!
 
I had to alter the original recipe. Reduced to smaller amount.

Feta-Topped Chicken



Ingredients:

  • 4 boneless skinless chicken breast halves (1 1/4 lb)
  • 2 tablespoons balsamic vinaigrette dressing (don't omit, it's very good)
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon seasoned pepper
  • 1 large roma (plum) tomato, cut into 8 slices
  • 1/4 cup crumbled feta cheese (1 oz)

Directions:

1. Set oven control to broil. Brush both sides of chicken breasts with dressing. Sprinkle both sides with Italian seasoning and seasoned pepper. Place on rack in broiler pan. If you don't have a broiling pan, you can make your own. Use a cooling rack and a casserole dish.

2. Broil with tops 4 inches from heat about 10 minutes, turning once, until juice of chicken is clear. (I usually turn mine more than once.) Thickest part of chicken will read 170. Top with tomato and cheese. Broil 2-3 min longer or until cheese is lightly browned.

Spinach-Cheese Balls



1 box (9oz) frozen spinach, thawed, squeezed to drain
1 cup Bisquick ,mix
2 cups shredded mozzarella cheese
1 egg
2 tsp. Italian seasoning
1 tsp salt
1 cup tomato pasta sauce, if desired (I haven't tried it with it yet)


Directions:  1. Heat oven to 400 degrees. Spray cookie sheet with cooking spray, In large bowl, mix all ingredients, except pasta sauce. Shape mixture into 1-inch balls; place on cookie sheet. (Mine are always way bigger, but still as good).  2. Bake10-15 minutes or until golden brown. Immediately remove from pan. Serve with pasta sauce.  (Recipe says makes 30 cheese balls. I don't get that many.)

These will go really fast. Very yummy!!!!

Chicken Florentine Casserole

  • 4 skinless, boneless chicken breast halves
  • 1/4 cup butter
  • 3 tsp. minced garlic
  • 1 tbls lemon juice
  • 1 (10.75oz) can cream mushroom soup
  • 1 tbls Italian seasoning
  • 1/2 cup half-and-half
  • 1/2 cup grated parmesan cheese
  • 2 (13.5oz) can spinach, drained
  • 4 oz. fresh mushrooms ( I leave out)
  • 2/3 cup bacon bits
  • 2 cups mozzarella cheese



1. Preheat oven to 350 degrees. Place chicken breast on baking sheet (I cut into strips and coat in olive oil); and bake 20-30 minutes until no longer pink in the middle and juices run clear, and set aside.
2. Increase oven temp to 400.
3. Melt butter in medium saucepan over medium heat. Stirring constantly, mix garlic, lemon, cream of mushroom, Italian seasoning, half-and-half, and parmsean cheese.
4. Arrange spinach over bottom 9x9 baking dish. Cover spinach with the mushrooms. Pour half the mixture from saucepan over mushroom. Arrange chicken breast in the dish, and cover with the remaining sauce mixture. Sprinkle with bacon bits, and top with mozzarella cheese.
5. Bake 20-25 minutes until bubbly and lightly browned.
