One pot Chicken, Sweet Potato and Black Bean dish

 



This dish is incredibly fast and easy to make. Below is the chicken broth powder I use in EVERYTHING! You boil 1 cup of water, and then I add 1 teaspoon of Knorr chicken bouillon powder and stir. It tastes wonderful and I use it in so many dishes.

 
    My ingredients and spices are:

*Chicken breast, cut up into chunks, then coat with 
salt, pepper, 1 tablespoon of Paprika, and 
1 tablespoon McCormcik Sesame+Ginger crunch
(I used 2 1/2 breasts for this dish)

*2 large Sweet Potatoes-skinned and cubed
(I cook mine in  water and add 1 teaspoon of the
Knorr chicken bullion powder and then microwave for
five minutes to soften and then DRAIN off the liquid 
before adding to the pot.)

*Can of Black Beans-rinsed
*1 can of Diced Tomatoes-drained
*1 cup of Chicken stock
(I use the Knorr brand)
*1/2 cup chopped Onions
*1/4 cup chopped Bell Pepper

Directions:

Turn on the heat and let your pot warm up.
Add 2 tablespoons of oil in a Dutch Oven, or large pot to coat bottom.
Add all your seasoned chicken breasts. Stir occasionally to 
mostly cook all your pieces for about 10 minutes.
When your chicken is mostly done,
add the onions and peppers. Cook for about 2 more minutes.
Then, add in your rinsed black beans, drained sweet potatoes
drained dice tomatoes and 1 cup chicken stock.
Stir to combine and add 1 tsp salt and 1 tsp black pepper.
Cover and the lower heat to a slow simmer.
Cook for about 10 more minutes, making sure your
chicken is done.
